(veggie) burgers and other analog recipes

Which standard recipes, with meat as a key ingredient, have clear vegetarian analogs? Examples, to be clear: for every hamburger, there is a veggie burger (eggplant, cauliflower, etc). Chili con carne becomes chili sin carne. For meatloaf there is Neatloaf. What else should I be thinking of? "Buy fake meat" is not heading in the right direction; "google 'vegetarian [meaty food]'" is a realistic suggestion but which foods?

Hungarian recipes

My kitchen is full of cabbage, and some dried Hungarian peppers (whole) and sweet Hungarian paprika (powder). What do you recommend I make?? Bonus level 1: South or Eastern Hungarian, if you know any regional specialty. Bonus level 2: vegetarian, but includes more than just the cabbage.

To eat or not to eat? Weird tofu

A naive shopper sent to the Chinese market to buy dried tofu ended up with something labeled as dried tofu but it is not really dry and it is long and skinny. It smells a bit funny even in the packaging. What can I do with it? How can we eat it? The Chinese characters for it are 筍茸.

Too many raisins!

What savory, no-oven dishes do you recommend for raisins? I have a lot of raisins, but I do not like them in sweet things (baked in bread, ugh!) and do not have an oven. They do make a great accent flavor in savory dishes. The raisins in question are golden, but I am Prime Minister of Substitution so it's rather academic what the recipe asks for.

Innovative jiaozi (potsticker, dumpling) fillings

Jiaozi, dumplings, potstickers, Chinese ravioli, gyoza: as many possible fillings as there are names for these delicious, delicious mouthfuls. In a couple weeks I will host a dumpling party. What are your recommended filling recipes? Of course there will be the standard pork, which I learned from a Taiwanese mom; there will be an attempt to replicate the long-discontinued Trader Joe's Chicken Fajita dumplings; and what else...? Recipes for known standards like seafood and vegetable are welcome, but more innovative entries are truly the best answers.

compromised site loses favorite recipe

How to get a favorite recipe for rajma chaval from Tiffin Tales? My favorite recipe for a red bean curry is now showing up as "this site may harm your computer" in google and is no longer in the google cache. The admin and blog author emails now bounce. Wayback machine does not archive it. No blog-scraping site has copied it. Other recipes online seem quite different. Is there anything else I am forgetting? [more inside]

Your best dips to go with raw or steamed vegetables!

What are your best dips to go with raw or steamed vegetables? As part of bringing lunch to work everyday, I'd like that many of those lunches consist of raw or steamed vegetables with a simple sauce or dip. I'm very open-minded to ethnic flavors, spiciness, sweet and umami flavors... surprise me! My preferred vegetables are bell peppers, cucumber, and broccoli, but you are welcome to convince me of other optimal pairings. [more inside]
