Recreating the perfect pineapple salsa

How do I duplicate at home this absolutely perfect pineapple salsa I just found? After being spoiled with my favorite recipe of all time at a local burrito place, the shack closed down and the perfect pineapple salsa went with it. This was four years ago. I've spent that time searching for something as close to that recipe as I could find, and just about a week ago I found an almost-perfect analog that is served at a regional "build-your-own-burrito" chain.

This chain seems more stable than the hole-in-the-wall the original perfect salsa came from, but nonetheless I want to try to recreate this perfection in my own home in case they do close down or I have to move, or just to save money. Now that I have a sample, I realize I'm going to have to do a lot of trial and error, but are there any techniques to this sort of thing that make it easier? What are the most typical ingredients to pineapple salsa that I should try first?

What is that orange seasoning they use in hawaii on pineapples? I had a friend in college who had transferred from a hawaiian college. He had this orange seasoning which was kinda sweet and savory that he said was used extensively in hawaii on pineapple.

Anyone know what this is? Or what it's comprised of? I would like to try and find it on the internet because it was very good.

Where can I purchase a fresh pineapple variant that I can't find at the supermarket? When I visited Hawaii, they had white-fleshed pineapple called Kona Sugarloaf or Pineapple Sugarloaf. I've searched on google and ebay, and while buying an entire plant is tempting, I'm really not the gardening type. Where can I get this fruit at a reasonable price?

I live in Connecticut and I'm willing to travel, I dunno, 100 miles to get the fruit if it can't be shipped.

In front of the Tiki Room at Disneyland they continuously play this old 1960s film about the Dole Pineapple cannery. Does anyone know where I can get a copy of this film? It is a fabulous film and I really, really would like to have a copy of it. I have searched on google, but to still no avail. Any suggestions?

PineappleJuiceFilter: Why is that you can only get pineapple juice in cans? I am talking bigger then the litttle 20oz bottles. The only ones I have ever found in any sort of bottle are those scary looking ones in the "ethnic" food aisle. It cant be a acid issue, so why just cans?
