I'm trying to go paperless, and have scanned and OCR'd huge stacks of paperwork into PDF documents. Can you recommend a tool to split, merge, delete pages etc from PDFs?

I'm looking to digitise all of my documents or as many as possible, but am slightly weary about shredding everything what sorts of documents should i keep original paper copies of and which should I digitise?
I ask because I don't want to end up in a sticky legal situation where I would require the original paper copy.

Is there Mac-based software available that will search my entire hard drive or designated folders for image-only PDF files (have not been OCR'ed) and then automatically run OCR (using Acrobat Pro or whatever) and override the original file with a searchable version?

My wife just won a Canon PIXMA MP610 printer/scanner. (We have not received it yet.) Can this machine do the paper-digitizing magic of a Fujitsu ScanSnap s510 scanner? Perhaps with additional software? If not, exactly what is it we'd be missing?

I do my best to not print out PDF documents and I realized that I could reduce my printing to almost zero if I had a PDF reader that would let me hilite and save hilites and add my own notes. Acrobat Reader doesn't seem to do this.
What readers can do this? I prefer linux or MacOSX but I do have a laptop that can boot Windows.
