I found a few boxes of steel cut oats in the pantry that I'd completely forgotten about. They expired in February 2013. Are they safe to eat or should I toss them?

I've identified the things my digestive system doesn't like, but I don't really understand why these foods are causing me trouble. Where can I get oats in bulk near the Boston area? I'm looking to cut down my breakfast costs, so I want to buy something like this. I assume that I could get it even cheaper than Amazon if I got it from a local cooperative/farm/something in the Boston area. Is that true, and if it is, how do I go about locating such a place?

I have a 5-qt slow cooker and would like to make as much Steel-Cut Oatmeal as I can in it for a breakfast for a crowd. What are the correct ratios and amounts of water and oats? Also interesting mix-in ideas are welcome. [more inside]
