What am I eating?

What's in my food? can I trust labels? With the stories and paranoia over tainted food, and specifically Chinese imported additives of questionable origin (like the "wheat gluten"/melamine in pet food), how do I find out what's in my food or if the information on the label is correct short of using a bomb calorimeter and gas chromatograph? Is there a lab I can send stuff to and get an analysis for a reasonable fee? And how detailed or reliable is it? Google has led to places like Bodycotetesting.com and Microbac.com, but I have no idea how reliable, affordable, or accessible to non-commercial types they are.

Nutrition Information on a can of Fat Free Reddi Whip

In a can of Reddi Wip Fat Free, which claims to contain 40 servings at 5 calories each, are there really just 200 calories in the whole can? (In other words, are they allowed to round down the exact serving size and/or number of calories, when the serving size is so tiny?) If not, what's the max number of calories that could actually be in there, and is there any way I can find out that true exact number?

Where might I be able to find the nutritional information for various artisanal cheeses? I use The Daily Plate to track my food intake on a daily basis, but I often enjoy small amounts of artisanal cheeses, where nutritional information is not readily available from the supplier. Of course I try to enjoy these items in moderation due to the high fat content, but I'm still like to get as specific as possible.

Would there be a source of information available that could outline general information for different types of cheese (sheep's milk v. cow's milk v. goat's milk)? I'm primarily concerned with any variation that may occur between saturated fat and protein content.
