I really really love all types of Asian cooking that involves noodles (banh pho, udon, ramen, whatever!). Problem: kosher asian noodles are crazy hard to find in my neck of the woods. Could you help me out by suggesting cookbooks or websites with great make-it-from-scratch noodle recipes? [more inside]

Asking for the boyfriend, who lives in the San Diego area:
If I wanted to learn how to make hand pulled noodles (as seen in these videos) where would I go? I'm willing to travel as far as Los Angeles area, and depending whether it was affordable, willing pay to learn the technique.

Can anyone offer advice on where to find quality noodle-based Chinese food in Montreal? I'm craving a good beef chow fan or some Shanghai noodles. I'm tried a few places in Chinatown, but haven't found anything good.
I'm also looking for a good BBQ pork and tofu dish & a Vietnamese place with good lemongrass chicken. However, noodles are the priority here.
BTW, if you are in Edmonton you can't do better than the Double Greeting Wonton House for noodles. It's a bit of a dive, but it's cheap and the food is fantastic.

NoodleFilter: I like noodles, spicy food and tasty, thick sauces. However, any time I cook noodles at home, they usually end up as noodle flavoured with a hint of nothing, never really the tasty noodle dish I'm aiming for. What are your favourite noodle recipies? What's your special hint for making a really tasty sauce to drown my noodles in?
