why is E not E?

i'm a total guitar noob and have been learning for only a month now, so please forgive what may be a really dumb question. why is it that to play certain chords on the guitar (for instance, C major, or A minor) you don't play the open low-E string, but you do play the open high-E string. it's the same note, isn't it? so why doesn't it sound as good?

How I do I turn my audience into loyal fans? Please name the artist who made this mystery electronica/dance song. I pulled it off of ageispolis's fantastic MeFiSwap mix, but sadly, he only knows the name: "The Hand". I don't know if it's the mystery of it, but it's my favorite track among a lot of great tracks. And I want to hear more, but Googling is is essentially impossible since there are no lyrics. And any ideas on how we can get to the Gorge from the RV spot, since they say no RV parking is allowed? We are, obviously, RV newbies (it's a rental).
