How can I deinterlace the MPEG files I have from my PVR? [more inside]

I have a project coming up where I will need to capture (digitize) a full 8-10 hours of footage (to be captured on DV tape) and make DVD copies for 3 people by the end of the next day. Ok, so I know how to go from DV to MPEG2 via either Final Cut Pro (v. 5.1.4) or Avid Xpress. What I'm wondering is, is there a way to bypass capturing the footage to DV (then converting to MPEG2) and going straight from the tape to MPEG2 so I can save myself hours of encoding from DV to MPEG2 and then burning discs? I'm planning on ripping my DVD collection to a media server, with varying amounts of losslessness depending on the film. There are a lot of ways to do this, and I'm looking for the "best" way. After the jump I'll describe my current plan, please comment on and clarify the various technical considerations. [more inside]

I regularly use ffmpeg to encode videos (from mpeg2 to mpeg4) for my ipod. I've been doing this for nearly a year with no problems. Now, every time I start an encode, my system is suddenly under a lot of pressure - I can't use any other application. If I go into the windows task manager and set the priority to 'below normal', all is fine again. Anyone have any idea why this change might have occured, or any idea how I can get around it (preferably without using task manager)? [more inside]

Does anyone know a decent real-time MPEG-2 capture program for the PC? One that produces high-quality output (as good as a standard DVD recorder), produces DVD compliant MPEG2 files, and is preferably free (or cheap). [more inside]

I'm looking for a tool which will allow me to cut MPEG2's from the command line (or programmatically otherwise). Either Windows or Linux/BSD. I've looked through a bunch of programs found via Google, but none seem to work without their GUI's. Bonus if the MPEG2 streams are cut at the GOP marker or if it re-encodes the GOP's at the cuts. Otherwise it'll get messy. Free is preferred, but pay would be fine too as long as it works.

I wish to rip DVDs to a Linux server and then watch them at my leisure on my TV via either a wired or wireless network. There appear to be countless devices that will stream videos (like this) but I haven't been able to tell which will play DVDs off a network (with menus and all) and which just stream plain-old-MPEGs. Has anyone got experience with a digital media gadget that will do this?

I have a bunch of iMovie 3 projects which I'd like to export as QuickTime movies and then convert to MPEG2 with TMPGEnc Express on Winders. I wish that TMPGEnc could just import a DV stream, but it won't, so my question becomes: what's the most lossless QuickTime format I can save as? Size-to-quality isn't the issue. I have lots of space, I just want to lose very little in the QuickTime export. Which format do I export in, and with which settings? wish I had a Superdrive...

Best way to rip video from a DVD into MPEG or AVI? I need to grab scenes from a movie and monkey with them in Premiere (Windows).
