We are looking for shelf-stable, packaged proteins and veggies that are gluten free to go in lunches. We know about GoPicnic already, but we'd like some more variety and real vegetables of some sort! Proteins are mostly easy (spreads, dips, cheeses, jerkies), but finding the individual packed shelf stable ones are tough. We have found no veggies that fit the bill at all- we were thinking freeze dried veggies, but that sounds unappetizing and looks really expensive (also not individually packaged).

I'm a travelling computer tech for a school district in Cincinnati. Of the 12 schools in our district, I am a tech for 4 elementary schools. I work year-round and all seasons; and am on the move constantly. I've recently cut wheat and dairy products out of my diet, and need some creative ideas/recipes for both breakfast and lunch. Vegetarian and meat/fish-containing suggestions are equally welcome. The higher-protein, the better. Easy recipes please since my cooking-fu is minimal. Since I eat lunch at work a couple of days a week, I want something easily portable (by bike) and ideally not requiring reheating (there's a microwave at work, but it's a bit inconvenient for me to use). I've just started a new job that doesn't have a microwave (or an oven) in the kitchen, which is a big downer for me as I've always taken leftovers or other easily heated food for work lunches (and there isn't any other heating facilities close by that I can use).
