I make chicken salad frequently. I make it by mixing shredded chicken, chopped veggies, sometimes fruit (grapes, blueberries or oranges), seasonings, acid (lemon, orange, or fancy vinegar) and mayo. I experiment with seasonings A LOT, but they all end up tasting pretty much the same. I think this happens because the mayo dampens the flavor of the seasonings. Can you suggest a way to avoid this? We are looking for shelf-stable, packaged proteins and veggies that are gluten free to go in lunches. We know about GoPicnic already, but we'd like some more variety and real vegetables of some sort! I've just started a new job that doesn't have a microwave (or an oven) in the kitchen, which is a big downer for me as I've always taken leftovers or other easily heated food for work lunches (and there isn't any other heating facilities close by that I can use).
