Maintaining fitness and sanity on a low-calorie diet

I'm an overweight (technically obese) triathlete who was recently put on a calorie-restricted (1200-1400/day), moderately carb-restricted (100-130 g/day) diet by my doctor(s). They also have me front-loading my calories into breakfast and lunch at the expense of dinner. It's been hard on me in various ways, physically and psychologically -- my training is suffering, and I really miss being able to share a normal dinner with my partner. I'm also on seriously non-optional medication that makes it hard for me to lose weight and, relatedly, has probably made me insulin-resistant. Help me cope. Low carb until dinner to lose weight?

I live with a group of friends and we all take it in turns to cook dinner one day of the night, which usually consists of lasagne, pasta, rice etc. I am wondering if I could lose weight if I ate low carb for breakfast and lunch, and then ate dinner that is prepared by my housemates? [more inside]

Food Manufacturing Advice--lowcarb variety

So--IRL I am a busy psychologist with a busy practice and not a lot of time. In internet circles--of the lowcarb eating community variety, I have a lovely rep as the creator of a really nice low carb flour substitute for baking. Although I have made my recipe available online (requires some specialty ingredients), folks are enthusiastic enough about this concoction that they are encouraging me to go into production and to sell it. I haven't a clue what that would involve, and would likely be more interested in remaining the creative end who partners with someone who can execute the production stuff. Easy protein-based options for camping food?

Next month I'm going on a two-week camping trip in New Zealand with Flying Kiwi, a tour company I've used before and enjoyed. My main gripe last time was the food: carbs, carbs, carbs all day long! Cereal and toast for breakfast, sandwiches for lunch, and pasta and rice-based dinners most nights along with some beer and cider.
