As I've become more and more interested in cooking my satisfaction with my electric inductive cooktop has gone proportionately down. I scored an awesome deal on a used gas cooktop on Craigslist and now I need to hook it up. I'm fairly handy, if not very experienced, but my brother-in-law will be helping and he's very competent.
Please, no advice to hire a professional. I've researched the safety aspect of this and I'm confident that we can handle this safely. [more inside]

What are the dangers and benefits of non stick cookware (teflon/generic teflon type)? It's obviously healthier to cook without using lots of oil, but I've heard rumors of health problems such as cancer being linked to long term use of non stick pans. [more inside]

We moved to a new shack in September. I say "shack," because the house had been neglected for 20+ years, it had no floor (!), a moldy bathroom, and a kitchen that had been constructed by an unskilled amateur cabinetmaker. So, a new kitchen was in order, and I arrogated to myself the role of kitchen architect. Mostly good choices were made, but I made a big mistake in measuring space for a downdraft ventilator for our cooktop, making it difficult to install a downdraft ventilator without using bulky ductwork on a highly visible side of our house. how can i get better at washing dishes by hand? i am inefficient (it takes me lots of time, energy and water). my results are not always sparkling (some of the stuff i wash ends up kinda greasy). i am clumsy too (i feel like i break a wine glass every few sessions). also, i am rarely motivated to wash (in part because i'm objectively bad), so i also need some kind of kick in the pants in that regard too.
