Shopping-averse cook seeks pantry-friendly recipes

Most weeknights, I'm responsible for figuring out and cooking a dinner for two adults and a 1-year-old that is on the table by no later than 6pm. I am hands-down finding this the most unpleasant and soul-killing part of day-to-day parenting, as making it to the grocery store is extremely difficult during the workweek and the last thing I want to be doing on the weekends.
