Why do I regret turning down this job opportunity?

Four months ago I was laid off from a company where I had worked for almost 15 years. I received a severance equivalent to 30 weeks of pay. About half of that was paid to me in bi-weekly paychecks while I could still technically be called an employee of the company. The last time I went job searching was through answering ads on Monster. Everything was fairly straightforward. I would send my resume, go on an interview, get an offer or not. How can I get a job as a grant writer for a non-profit organization?

I quit law school (a very prestigious, top five school) four years ago and have been working in education ever since (first as an aide for Autistic children, then as a substitute teacher for two years). In this time, my student loans have been accruing interest and keeping me up at night. I can qualify for loan forgiveness programs as long as I work for a non-profit or a school. Unfortunately, the work I was doing for the past four years did not count because I worked for private companies that contracted out to schools. For many reasons,(see below) I would now like to break into grant writing. I have written three successful grant proposals in my career (one for an educational outreach program in college, one for a Fulbright Grant, and one for an international NGO). I am currently strengthening my grant writing skills by taking webinars and utilizing other free online resources. How can I present myself as a viable candidate for these grant writing jobs? And how do I explain the many changes of direction on my resume and the long winding road I took to get here? [more inside]

I suck at Scrabble and I need Words to express Things. Help?

I would like to include in my cover letter the sentiment that the years I took off from work (for reasons I touch on) make me hungry for any job I take on. I would really like a job that gave me things to think about, something to focus on and obsess over. How can I put this that doesn't use the word "hungry" and makes me sound more like a dedicated worker and less like a slightly crazed person? My thesaurus's suggestion of "could eat a horse" is not helping.

Hey Mefites, here's my question: My younger sister, mother, and I suffered years of abuse at the hands of an alcoholic stepfather - physical, verbal, etc. When we were younger, my sister and I were absolutely focused on getting the fuck out and did, getting scholarships to great schools, thankfully. My mom, not so much. She is no longer in a relationship with him, but they have been living together for economic reasons - she needs his disability paycheck to pay the bills (all of which are in her name, including the mortgage payment.)
