I have an extreme aversion to video chatting. I'm not looking to AskMeFi to fix that. I'm just looking for help in: 1. setting my iPhone 4 so I'm not invitable to FaceTime (it's too easy to accidentally hit the "accept/answer" button), optimally while maintaining the ability to invite others (in case of some sort of emergency need), and 2. figuring out how to make audio-only Skype calls (incoming and outgoing) using my iPhone's SKype or Skype-WI-FI app.

I have to shoot a quick, five-minute video that's basically a vlog: just me talking into the camera. To film it, I can use either a built-in iSight camera on a 2008 pre-unibody MacBook Pro, or an iPhone 4. Which one would be the better choice? Yeah, I'm aware it's not going to look cinematic with either one, but I want to look as decent as I can within reason.

I have a Mac Mini that I'm using as a media center running Plex. I want to be able to watch the media stored there (a couple terabytes of AVIs, MP4s, etc...) from anywhere I am, on a laptop or hopefully even on my iPhone. Is there any hardware/software solution that will help with this?

I have a substantial amount of anime that I'd like to watch, but a less-than-perfect system for doing it. Pretty much all of it is in .mkv files (h.264 video and AAC audio) with subtitles, and I'd like to transcode them to a format that's playable on either my iPhone or my PS3 with subtitles intact. I've tried both handbrake and VLC, and I either get 1) no subtitles in handbrake or 2) encoder errors in VLC. So, hive mind, what am I doing wrong here?
