Why do so many lactose intolerant people continue to eat dairy?

Although I have almost entirely adjusted to the lactose intolerant lifestyle over the last few months, it never ceases to amaze me that lactose intolerance is supposed to be the default, yet dairy is such a permanent fixture of the American diet! There's cheese and/or milk in nearly everything. My question to is: why do so many lactose intolerant people continue to eat dairy? [more inside]

I'm only dairy (and gluten) intolerant if I stop eating them.

I can eat dairy and gluten in large quantities to no ill effect, in terms of any GI symptoms, as long as I'm doing so on a regular basis. If I cut them out completely for 2-4 weeks, the initial reintroduction (accidental or intentional) makes me sick for a day or more (bloating, diarrhea, etc.). [more inside]

Is there any benefit to being medically diagnosed as lactose intolerant?

My child recently (in the last three weeks or so) has been complaining of stomach aches and I think they are correlated with dairy. I am more than fine trying an elimination diet by avoiding dairy for a time and reintroducing it. But, I was wondering if there is any reason I am not thinking about to see a doctor. Is there any benefit to having a lactose intolerant diagnosis? Is there anything I should be considering for my daughter? I know of some of the tests you can take but should we bother? [more inside]

Eating out with milk allergy/intolerance

I want to know how have people with milk allergies and/or lactose intolerance changed their lifestyle in terms of eating out. It seems it should be simple- all you need to know if there is milk in it- but then again, not so much, esp if its not consistent (different brands etc). I am not interested in answers of the kind, "ask the waiter" but I am more interested in knowing how it affected this part of your life. Is it a drain to eat out with people at the new office when they ask you out? Do you turn a date down just because..? How did you accept that you may never be able to enjoy that ice-cream or cheesecake again?? (sigh)

If I can't eat shiitake, what else should I avoid?

FungusFilter: I have an unpleasant intenstinal reaction to shiitake mushrooms. A nibble off of one is enough to set it off. This is a fairly new thing for me (I used to be able to eat them, though fortunately for me, I was never a big fan). Regular cap mushrooms and portobellos are fine. This leaves a lot of other mushrooms (porcini, etc) in the twilight zone. Based on this limited knowledge, are there other mushrooms I should avoid? Experimenting with every mushroom that comes along could get pretty ugly.
