Gluten-Free, Slow-Carb, and Vegan

Greetings All: I have been reading up on transitioning to a vegan diet and there are so many things to think about. One of the best comments I received from someone on a previous post is that eating vegan does not equal being healthy necessarily. So I have been reading some books about eating a healthy vegan diet. I would also like to avoid gluten and somehow work on making this a slow-carb diet if at all possible. [more inside]

25 pounds of thawed chicken breast. what do I do?

I have 25lbs of thawed chicken breast. I do not have a grill, but a full kitchen. What are the best ways to pre cook and store chicken for later use. I have a freezer chest for storing cooked chicken. My goal is to have prepped chicken that I can use on week nights to create quick easy meals OR to create healthy lunches. Any ideas about how to create meals with prepped chicken are a bonus.

Help me feed a teenage boy healthy school lunches

Sane eating and dieting rules

Since I was a teenager(so 20 years now) I've struggled with eating and I've to yo-yo'd from skinny (nearly anorexic) to 30lbs overweight. I have tried everything (starving myself as a teenager, weight watchers, Atkins, calorie counting, high fiber, one plate, cross fit, seeing a nutritionist) none of it has done what I want: a sane eating lifestyle that I can live with for the rest of my life and maintain a healthy weight. How do I avoid gaining weight and stay on a diet while on a cruise ship?

This year I made a resolution for healthier living and have been successful so far. Overcame a lot of bad habits compared to where I started. But I'm going on a cruise with a group of friends next month. From what I've been told it's going to be an around the clock buffet. I'm planning on using the gym but don't know how to deal with all of the food. I'm not going to be on the alcoholic drinks package and figure I can enjoy dinner that way. Breakfast and lunch are a free for all though. Any ideas for what my best options would be so I don't gain 15 by the end of the week.

How to use up peanut butter?

I have a bunch of peanut butter that I need to use up, but I'm running out of ideas. I would particularly appreciate recipe ideas that I can use in meals, though all I can ever really think of is perhaps Thai-style chicken/noodles, or PB&J sandwiches, or fruit with peanut butter dip. I know there's also stuff like peanut butter cookies and other baking goodies, but I'm trying to avoid sugar-bombing my diet too badly. Please help me with ideas!

Women's health says this will get me a beach body

Dear metafilter: I'd like to get your opinion about this eating plan. I'm a 5'6 36 year old woman and I need to lose 20lbs to have a normal BMI. I've been strength training 4 times a week for eight weeks. I've been trying to eat only whole foods and lots of vegetables since the beginning of the year but I've not lost any weight mostly because I will eat big fatty meals at a restaurant after being good all week. I also haven't been counting calories and even though i've been eating whole foods my snacks of hummus and cheese and crackers have probably had too many calories. The only exception to the whole foods has been chocolate from the office candy jar and diet soda, which I really need to quit. [more inside]
