Do you have any personal recipe recommendations for hamburger?

Can you help me come up with a recipe plan to use up this glut of hamburger that I have? I went deer hunting this year, and had good luck. This is great and all, but now I have ~30 lbs of ground venison (in addition to the steaks/roasts).

I'm looking for personal, specific recipe ideas/recommendations that you have featuring ground beef/venison so I can use all this up throughout the year. I will undoubtedly be making some into good-old-fashioned burgers and chili, but I would like some ideas to break it up a little.

Yes, there are plenty of recipes on the web, but this is MetaFilter after all.

The meat is vacuum packed and stored in a deep freeze, so safe storage through the year isn't much of a concern. Also, we mixed in a small amount of pork with some of it, so that it wouldn't be TOO lean.

Yo beef is so fat, when it goes to the beach, the tide comes in.

I was just browning some ground beef - and I was struck with a moment of inadequacy.
Am I doing this right? Maybe some people do this in a much more sensible way than I do.
So, my question - how do you drain the fat off of your ground beef? Here's what I do:

Brown ground beef in a frying pan.

Remove from heat.

Push the meat off to one side of the pan.

Tilt the pan so the fat pools up on the other side.

With a tablespoon, I slowly scoop out the fat - depositing it into a disposable plastic cup.

When I'm done, and the fat is close to room temperature, I wrap the cup in plastic wrap, and store it safely in the fridge.

On garbage day, I put the (mostly re-solidified) fat cup into the garbage.

Critique me, please.

Grilling Burgers

BBQFilter: I'm going to make some burgers tonight to throw on the BBQ, but every time I have done it in the past it has been a failure (either fall-apart burgers, or less than satisfactory in the taste department). I have googled, and tried many recipes, so that is where you wonderful people come in. What are your tried and tested burger recipes and tips? I have some ground beef for me and some ground turkey for the missus thawing as we speak... make my mouth water!
