When grilling meat - how do you measure the temperature?

When you're grilling a good size piece of meat (a large steak, a pork tenderloin) - how are you supposed to measure the temperature? I have a good thermometer (http://www.thermoworks.com/Thermapen-Mk4), but the issue is that different parts of the meat will be wildly different. E.g., with a tenderloin - the narrow ends will be 140° while the thick center is less than 100°. When a recipe calls for 140°, for example - how do you decide when that is? When the coolest part is that temperature? When the average of several different spots is that temp?

Watching people grill drives me crazy

Summer is nearly upon us, and it's not only the temperature that's rising -- it's also my anxiety. At other peoples' lovely homes, I can't enjoy their hospitality because I'm too distraught from the horror of witnessing egregious food handling errors around the grill. [more inside]

Propane grills for dummies

I just moved into a new apartment, and the previous tenant very kindly left me his propane grill. He said it's clean, but the tank is empty. I've never used a propane grill before, and I'd like to use it this Tuesday to grill some hot dogs and hamburgers. What do I need to know to use it properly? Assume minimal knowledge of grills in general. [more inside]

Tell me about grilling.

I'd love to start grilling. Problems: I don't (yet) have a grill and I have a non-meat-eating partner. I have two specific questions: 1) Charcoal or gas? My dad says there's no easy answer to this... Benefits of each? Any specific grills you love or hate? 2) What can I grill for my vegetarian boyfriend? Recipes or resources would be amazing.

Can chicken and pork be smoked together using the same recipe?

I'm planning to serve up some BBQ baby back ribs this weekend. It's a recipe I've used several times before, using a Traeger smoker/grill, and people love it! For guests who don't eat pork, I want to offer bone-in chicken breast, and was wondering if the chicken can be cooked using the same process, or will it need a different recipe? [more inside]

How to generate "grilling smells?"

So we're opening up a concession stand a local soccer field tomorrow, and we're going to have a grill at which we're going to serve typical grill stuff (burgers, dogs, maybe a few fancier things here and there). What can we throw on the grill (like in a saucepan on a side burner) that can blanket the fields with the smell of home-cooked burgers and generate some serious mouth-watering? The grill's fairly small -- a fairly typical four-burner suburban soccer dad fixture, and the stand will be open for about 2-2.5 hours each night. [more inside]

This question is the opposite of "should I eat it?"

One of my favorite no-brainer meals is grilled chicken marinated in fat-free Italian dressing. Yum! You don't win friends with salad.

Planning to grill steaks tonight, I sent Mr. Artychoke to the grocery to buy rib eye steaks. He came home with a gigantor 5 pound ribeye roast, thinking that the package contained a bunch of really thick steaks stacked sideways in a meat tray, or something. We have no idea what to do with this. Do we have to cook it like a roast? (If so, okay, do you have a good recipe or should I go with the best looking recipe that comes up when I google.) Or, can we cut it into regular steaks and cook as usual?? [more inside]
