How to generate "grilling smells?"

So we're opening up a concession stand a local soccer field tomorrow, and we're going to have a grill at which we're going to serve typical grill stuff (burgers, dogs, maybe a few fancier things here and there). What can we throw on the grill (like in a saucepan on a side burner) that can blanket the fields with the smell of home-cooked burgers and generate some serious mouth-watering? You don't win friends with salad.

Planning to grill steaks tonight, I sent Mr. Artychoke to the grocery to buy rib eye steaks. He came home with a gigantor 5 pound ribeye roast, thinking that the package contained a bunch of really thick steaks stacked sideways in a meat tray, or something. We have no idea what to do with this. Do we have to cook it like a roast? (If so, okay, do you have a good recipe or should I go with the best looking recipe that comes up when I google.) Best way to clean a panini press with non-removable sides? I had a grilled cheese party last night (thanks AskMefi!) and now have to clean a few panini presses. The sides are not removable and I'm not sure how to tackle this. I've tried heating them up and then scrubbing, but there is still plenty of grease inside the grooves. Any tips? Best cleaning fluid? A secret old wives tale with rubber bands and a toothpick that I'm missing?
