Eating out is an option *some* nights, but cooking takes up the majority of our time week nights. We&apos;re talking 2, sometimes 3 hours a night between prep cooking, actual cooking, eating, and clean-up. We do our best with using few ingredients, but we are out of creativity. There are TONS of recipes out there for one-pot meals, but often involve cheese to hold them together. That&apos;s a fail, as soy cheese is 1.) Not a great binder, and 2.) Kinda gross, really. What do y&apos;all who are GF/CF do for easy, minimalist cooking? We&apos;re ready to just start sleeping in the kitchen. . . .</description>

	<description>I strongly dislike meat, but eating it is good for my health. What are some tasty recipes which include meat but don&apos;t taste strongly of it? Difficulty: complex dietary restrictions. I am mildly revolted by the texture of most meat. I have never liked it much, and lately, forcing myself to eat more of it than usual for the good of my blood sugar has made it seem even less appealing. I do eat fish, but I would like to be able to eat a little more meat, too. It&apos;s easier for me to eat when it is disguised (like in chicken fingers) or mixed with lots of veggies and cut into small pieces.&lt;br&gt;
&lt;br&gt;
Dietary restrictions: I have to eat very, very low-carb (no grains, legumes, fruit, sugars, etc.) and I am on the Specific Carbohydrate diet, which means no lactose, high-starch foods, or preservatives. I would appreciate recipes that do not include these foods, but I am open to suggestions of substitutions. Thanks!</description>

	<description>I want to make my own brown rice and sorghum syrups for gluten free home brewing.  Why is it so hard to find recipes? I took up home brewing about six months ago and about two months ago decided to start a gluten free diet for health reasons on the advice of my doctor.  I made my first gluten free beer using some Briess syrups but now I want to take it to the next level.  I&apos;d like to make my own sorghum and rice syrups but Google seems to mock me in my attempts to figure out how to make these syrups.  I am bombarded by recipes that use these syrups but almost nothing that states how to make them and where to get the ingredients.  Can the hive help?&lt;br&gt;
&lt;br&gt;
Specifically, where can one get sorghum in a raw form to make your own syrups?  Brown rice is easy enough to find but how does one prepare rice or sorghum into a syrup to use for brewing purposes &lt;strong&gt;and&lt;/strong&gt; make them gluten free.  The only recipe I found wanted to use sprouted barley for enzymes which is obviously off the table.</description>

	<title>How do I bake some gluten free bread?</title>

	<description>I love Canyon House 7 grain bread and the Udis Whole Grain Bread (Gluten Free, both of them). I love them, wonderful breads, the only trouble is it&apos;s hard to justify spending $6+ a week on bread that is gluten free. I have a gluten intolerance so I need to eat gluten free. 

I love to cook/bake, an have lots of flours and mixes. What&apos;s the best recipe that is most similar to Udis (any one) or Canyon House that is gluten free? I am looking for bread that doesn&apos;t fall apart, looks at tastes like sandwhich bread.

	<title>Help Me Make a Dietarily-Constrained Feast Great!</title>

	<description>So, I need to do some vegan cooking, but there are extra limitations. Help me come up with some ideas for a fun Thanksgiving I have a friend who is coming to visit for a few days around Thanksgiving, and we&apos;ll be cooking up a storm.&lt;br&gt;
&lt;br&gt;
Dietary constraints:&lt;br&gt;
1. Vegan&lt;br&gt;
2. No soy&lt;br&gt;
3. No wheat/gluten&lt;br&gt;
4. Nothing acidic (or, possibly, in &lt;em&gt;very small&lt;/em&gt; amounts)&lt;br&gt;
&lt;br&gt;
Advantages&lt;br&gt;
1. All vegetables and fungi welcome&lt;br&gt;
2. No need to replicate a &quot;traditional Thanksgiving.&quot;&lt;br&gt;
&lt;br&gt;
I&apos;m not terribly worried, because there is a load of Indian cooking I can make work, some soups, and we both like roasted vegetables &lt;em&gt;a lot&lt;/em&gt;. However, I have two issues:&lt;br&gt;
&lt;br&gt;
1. Sauces. A lot of the things I make (like the roasted vegetables) are a bit bland without some sort of sauce. Most of those sauces rely heavily on soy sauce and/or vinegar/citrus/tomatoes. I have an idea for a sort-of gravy involving reduced mushroom broth thickened with corn or potato starch, but it&apos;s still in the design stage. How can I make some great savory sauces w/o acid?&lt;br&gt;
&lt;br&gt;
2. I&apos;d like to make some nice desserts. I have  a recipe for a vegan chocolate pudding which I think will do, and I have plans for a fruit crumble where I will swap out gluten-free steel cut oats for the wheat the flour, but I am a bit concerned it won&apos;t cook properly. Also, suggestions on (soy) butter substitutes for the topping would be appreciated.</description>

	<description>Can you recommend a particular recipe for a gluten, soy, dairy, artificial sweetener, and corn-free cake and pizza? My awesome workmate is having a birthday in a couple of weeks, and she is on an elimination diet to determine food sensitivities that may be affecting her restless leg syndrome.  &lt;br&gt;
&lt;br&gt;
Corn, soy, wheat/gluten, artificial sweeteners, and dairy are not allowed at this time for her. She is allowed to have stevia drops and some natural sugar in moderation. She can also have nuts, eggs, and fruit.&lt;br&gt;
&lt;br&gt;
I have googled for recipes and have found many that have only *1* of the forbidden foods, but haven&apos;t had luck finding recipes for pizza or a cake with *none* of the above foods.&lt;br&gt;
&lt;br&gt;
Can you recommend a specific recipe for either or both? My workmate is awesome and deserves these favorite foods for her birhthday! Thanks, guys!</description>

The thing about quick prep is important but a little flexible - I have limited time in the evenings and can&apos;t do much in the morning, but could do 30min (loud, complex) prep in the evening with another 30min of (quiet, easy) work in the a.m., if the idea seems worth it.</description>

The problem is she&apos;s 8 and is really hating this idea. She&apos;s been through allergy testing and she came up normal for all foods they tested. We&apos;ve been through several weeks of a dairy free diet (which wasn&apos;t too different because she naturally avoids cheese and milk) but the idea of it was hard. Now I want to turn this around somehow and make gluten free as normal as possible--or even exciting! &lt;br&gt;

* What are your favorite gluten-free sweet or salty snacks? She loves all sweets naturally but she also solves salty crackers and chips, etc. I was thinking to bake some cupcakes or what would be good for desserts and treats?&lt;br&gt;
* Please give me an idea of a typical day&apos;s breakfast, gluten-free. My daughter always eats toast or a bagel for breakfast. From what I&apos;ve been reading, gluten-free bread is not tasty. What should I substitute? She doesn&apos;t eat eggs or oatmeal. She will avoid most cereals unless they are sweet. She can have sweet cereals sometimes but what else is there? &lt;br&gt;
* Same with lunch. What do you or your child take for lunch? She normally eats a sandwich, fruit, carrots, etc. She doesn&apos;t want to look &quot;different&quot; so suggestions of sushi or rice based meals in a thermos do not fly. Any ideas here? Again, she doesn&apos;t eat cheese so dairy free suggestions would be great.&lt;br&gt;
* Dinner should be easier but if anyone has a favorite recipe or meal that their child loves, I&apos;d love it.&lt;br&gt;

If anyone&apos;s got any experience with this machine, I&apos;d love to know, before I go about finding the &#xa3;500 which might finally give me a reliable convenient portable source of nutrition.</description>

	<description>GlutenFilter: Prior to going gluten-free, did you have specific gluten attacks, or were you just generally in pain all the time? I&apos;ve had chronic GI issues my entire life - abdominal pains, bloating, gas, constipation - but it wasn&apos;t until recently that I started to have persistent joint and muscle pains that I decided to go see my doctor. He suggested trying a GF diet for a month, but told me that tests aren&apos;t very reliable for non-celiac gluten sensitivities.&lt;br&gt;
&lt;br&gt;
I&apos;ve yet to start the diet, b/c looking back at the foods I eat, and the reactions they trigger, I can&apos;t make a compelling connection with gluten. For instance, I play poker every Thursday night and drink a lot of beer (way more than I&apos;d usually have on any other night), yet I don&apos;t feel any worse the next day. Same goes with having a particularly gluten-y lunch, like a sub sandwich with pretzels. No immediately or delayed reaction... I just feel the same amount of crummy.&lt;br&gt;
&lt;br&gt;
So I&apos;m wondering if I should take my personal experience into account, or if, perhaps, I do have a gluten sensitivity and my body is just fighting it constantly, and not showing signs of attacks or flare ups.</description>

I am proposing to her in Rocky Mountain National Park near Estes Park, Colorado on Saturday. She loves Beau Jo&apos;s pizza but we just had that last week, and we&apos;ve had it a lot lately. This is kind of my price range but I can go more expensive. &lt;br&gt;

What are some romantic places (to eat at, Boulder/Longmont/Estes Park/Broomfield) that meet the following requirements? &lt;br&gt;

	<title>Gluten Intolerant in a gluten filled work environment</title>

	<description>I am Gluten Free, work in a small office, we all bring our lunch, but others&apos; lunches make me sick!  What do I do??? I work in a small office with 3 other people.  I am extremely gluten intolerant, and recently one of my co-workers started the medi-fast diet, which is powdered food full of Gluten that fills up the air and makes me so incredibly ill.  I have been open about how sick I am (without getting into the gory details) and we are trying things like opening the window, and getting an air purifier, but unless you are gluten free you don&apos;t understand the pain that i am suffering through!  I feel like they don&apos;t take me seriously!  What do I do?  I can&apos;t just tell everyone to stop microwaving their lunch of choice (and they don&apos;t seem to be volunteering that route anyway).  Any suggestions on how to handle this?  I am so sick and totally at a loss :(</description>

	<title>Substitute for sweet rice flour?</title>

	<description>I have a recipe for gluten-free chocolate chip cookies that calls for rice flour, sweet rice flour and cornstarch. I can not find sweet rice flour at this late date. What is it for and what could I substitute? The recipe calls for 1 1/4 cups rice flour, 1/2 cup sweet rice flour and 1/4 cup cornstarch. I was able to get rice flour last night but all the stores I called today (Fresh and Easy, Trader Joes and Whole Foods) do not have sweet rice flour in stock. &lt;br&gt;
&lt;br&gt;
I work until 5 pm today so those were the closest stores that I thought might carry it and are open after 5.&lt;br&gt;
&lt;br&gt;
I&apos;ve never done gluten-free baking before and some searching says the sweet rice flour gives moistness. Is there anything I could substitute? Bonus points for something easy to get like applesauce.</description>

She will be coming home for Thanksgiving and I&apos;d like to make some gluten-free dishes for our family pot-luck style dinner. The interweb is chock-full of gluten-free recipes, but I don&apos;t know which ones are good and which are just meh. Please share your favorite gluten-free Thanksgiving-y recipes! For what it&apos;s worth, I usually contribute at least a green bean casserole and a traditional English trifle for dessert, but I&apos;m open to changing things up an cooking something different.  I&apos;m also open to going to Whole Foods and buying gf pumpkin pie :).&lt;br&gt;

	<description>What can I send for a kid&apos;s school lunch that doesn&apos;t need heating or refrigeration, has a super-fast prep time, and doesn&apos;t contain gluten, peanuts, or dairy? My poor peanut-allergic fourth grader has been diagnosed with IBS, and we need to try her on a gluten-free diet for at least the next few weeks to see if that&apos;s the cause of her ongoing stomach aches. Help the two of us figure out what she can bring for lunches that meet her criteria:&lt;br&gt;
&lt;br&gt;
* OK stored at room temperature for up to five hours&lt;br&gt;
* Easily portable&lt;br&gt;
* Does NOT contain peanuts, gluten, or dairy (other nuts are... iffy)&lt;br&gt;
* Does not require reheating, as in a microwave&lt;br&gt;
* Suits a fourth-grader&apos;s kind of picky palate&lt;br&gt;
* And for me: Not a massive prep time. I&apos;d really prefer things that don&apos;t need heating up and putting into a thermos. This is probably the one criteria most likely to go, sigh.&lt;br&gt;
&lt;br&gt;
Before this, she&apos;s been eating the school lunches. She does not have access to a refrigerator or microwave at school. &lt;br&gt;
&lt;br&gt;
Things we&apos;ve tried:&lt;br&gt;
* Sandwiches on gluten-free bread. She hates all of the gluten-free sandwich breads we&apos;ve found (I can&apos;t blame her).&lt;br&gt;
* Lots of fresh fruits and vegetables: berries, apples, raw bell pepper, baby carrots, even frozen mixed vegetables (they thaw by lunch, and she likes &apos;em cold). She likes these quite a bit, but it&apos;s not enough for a whole lunch.&lt;br&gt;
* Roll-ups of sliced turkey or bologna. She likes this... kind of, but not a lot, and not for every day. We need other options.&lt;br&gt;
* We&apos;ve nervously let her eat almond crackers. She&apos;s fine with them and loves them. Might plan on sending almond thins and sliced turkey pepperoni as a lunch, with some red bell pepper.&lt;br&gt;
&lt;br&gt;
Things we haven&apos;t tried, and the reasons why:&lt;br&gt;
* Tuna, egg, chicken salads. She dislikes mayonnaise-based salads intensely.&lt;br&gt;
* GF pasta or rice salads. She might or might not like them, and either way, they require a whole lot of advance preparation.&lt;br&gt;
* Hard-boiled eggs. She dislikes eggs of all kinds.&lt;br&gt;
* Hummus. She doesn&apos;t like this, either.&lt;br&gt;
* Nuts. She&apos;s recently OK with foods containing almonds, but she has a strong aversion to most things that have a nut flavoring, much less any outright nuts. She also doesn&apos;t like sunbutter.&lt;br&gt;
&lt;br&gt;
The child in question is very smart and responsible, and she will be reading this thread, so you&apos;re welcome to make a case directly to her for trying new things, or giving a fresh chance to something she has tried before but didn&apos;t like at the time.&lt;br&gt;

Whew. Help, help! I don&apos;t want my poor kid to have to eat nothing but cold lunchmeat for the rest of her school career!</description>

	<description>Food allergies have taken away my staples. Please help me eat! Gluten, dairy, and grain free (maybe Paleo) people, this means you. I&apos;ve been developing and discovering food allergies and intolerance left and right. Right now, I know I cannot eat any gluten, soy, corn, rice, or dairy products. Legumes (beans, lentils, peas, etc) are off the menu too. Even quinoa and sunflower seeds have not been kind. Except for the soy and corn, which I&apos;ve known about for a few months, cutting out the above is all new to me, so I&apos;m often stumped on what to eat. &lt;br&gt;
&lt;br&gt;
Unfortunately, I don&apos;t think I can afford a dietician; I&apos;m already paying for my allergist out of pocket. &lt;br&gt;
&lt;br&gt;
I&apos;m concerned that I may be loading up on the same foods: mainly sweet potatoes, cassava, meats, fruits, and occasionally homemade almond milk. &lt;br&gt;
&lt;br&gt;
Any cookbook or blog recommendation? I&apos;m not looking for &quot;yay, stick with the program&quot; weight loss ones. Eating any of the above puts me in a lot of misery and I&apos;m not concerned about my weight or falling off the bandwagon. I need more lifestyle help. I thought about getting Elana Amsterdam&apos;s &lt;em&gt;Almond Flour Cookbook&lt;/em&gt; but I&apos;m afraid I&apos;ll load up on too much almonds. Plus, almond flour is expensive! &lt;br&gt;
Most gluten free blogs and books don&apos;t help since they rely upon other grains I cannot eat. Plus, going to regular food blogs or my favorite cookbook is depressing since I can&apos;t eat most of it. &lt;br&gt;

We&apos;ve invited about 40 people and the food will be served as a buffet.  *SPECIAL ISSUES* &lt;b&gt;Gluten free, low sodium, vegetarian&lt;/b&gt; - I&apos;d like at least one side to accommodate each of those people.  &lt;br&gt;

I&apos;m not going &quot;comic scary&quot; or &quot;cute Halloween&quot; as much as kinda-sorta realistic scary - so far we&apos;ve found a Jello salad that looks like gloopy dark red chunky blood, and are thinking of a pasta salad with various orbs (tomatoes, mozzarella, olives).  Otherwise we&apos;re stuck.  I&apos;ve searched the archives, online, and Pinterest, but most of the suggestions I&apos;ve found are for main dishes or desserts (well covered), or broadly for panna cotta modifications (blech).  &lt;br&gt;

	<description>Pimp my pantry - Allergen free style. Yesterday, my husband was diagnosed with a allergies to wheat, soy and peanuts.  He&apos;s been told to eliminate all three from his diet.  I&apos;m the primary cook for the family.  I try to make sure that dinners are large enough to provide lunches for us as well.  So, taking his lunch to work is not going to be an issue.&lt;br&gt;

I&apos;ve decided to tackle this as a cooking challenge.  I&apos;ve already gone though the pantry and fridge to identify all the items he can no longer have.  My pantry is suddenly looking pretty sad.  While I&apos;ve kept a little pasta to cook for the kids on the nights when DH is out of the house, there&apos;s a lot of food that&apos;s being passed to a neighbor.&lt;br&gt;
&lt;br&gt;
So, what are some of the staples that you find essential to your allergen free pantry?  For example, if I can&apos;t use cream of mushroom soup in a recipe because it has soy oil, what do you keep on hand to use instead?  I know that I&apos;ll need to get tamari to replace soy sauce.
