Can an XBox 360 and/or Playstation 3 be made to play archived/ripped DVDs that preserve the menu structure? Is there a guide for doing that somewhere?

I'm still trying to connect my upcoming XBOX 360 to my computer monitor. The monitor has only VGA and DVI-D inputs and no audio output, however, so I'm having issues tracking down what needs to be done. Currently I'm fairly sure I've got what I need for
video, but I still need help figuring out
how to connect audio.

I'm getting an XBOX 360 shortly, but I have a few questions about setting it up. For one, my television is very bad, so I'd like to use my computer monitor for it - should picking up a VGA cable be fine?
Secondly, I'm not sure how the XBOX's audio ports are set up - can I just plug my headset with a standard headphone and microphone plug into it, or do I need adapters?

Can you recommend any XBOX 360 (or PC/MAC/Linux for that matter) games that are more quiz / education oriented (not counting Trivial Pursuit).
Specifically, I'm thinking of games that involve things like: naming / identifying countries / capitals / rivers / mountains etc; naming / identifying species of animals or plants; anatomy / medicine type stuff; physics simulators like Phun.
