How can I become okay with not getting the best possible deal?

Whenever I buy an item, and later discover there was a cheaper way to buy the same item, it really upsets me. It bothers me for hours or days. This stresses me whenever I need to buy variable-cost items like plane tickets and insurance, because I will probably find out I didn't get the best deal and then feel bad. Rice and Beans

I'd like to start preparing my meals for the workweek in a batch on Sundays, to be refrigerated and microwaved as needed. I'm looking for a specific rice and bean-based recipe (type(s) of bean, optimal ratio of rice to beans, cooking time) that's cheap and nutritionally complete. That is to say, I'd like to be able to eat this for about half of my meals in a week and remain healthy.

Am I being too cheap and not rewarding myself enough every now and then?

During the past 4 years, I was working part-time (23-30 hours a week) at an optical department in JcPenny. Other than a 10 minute drive from home/school, the pay was not great as to be expected within the retail sector. I was thankfully laid-off in early March and came across another gig that was 40 hours a week with benefits to boot & making $3 more a hour. Now I'm making twice the income in a month's time. My boyfriend and I have a cooking puzzle for you: we rather wildly underestimated the price of our groceries when we went shopping this evening, and as a result we decided to try to raid the current contents of our pantry to accommodate two weeks of meals rather than just one. Well, it turns out we have way more stuff than we thought, but we have no idea how to put it all together. Assuming that we can buy $10 or so more groceries if we need to make recipes work, can you tell us how to make the enclosed list of ingredients into 5-7 tasty vegan dinners that are more interesting than just five nights of beans and rice?
