How to rent a kitchen for a week?

We are planning our wedding for mid July of this year and we want to cook most of the food for it in the week or so leading up to our wedding. Is 43 degrees safe to store food?

My new mini fridge will not get colder than 43 degrees and I have it cranked up to max cold. I have gone through 2 of these fridges now and it seems they don't get colder than that. Is it safe to store food in there or will it make me sick. My fridge thermometer that I bought says than anything above 40 is in the "danger zone" .

Another one of metafilter's favorite topics. Fridge left open since 7am (CDT) this morning. Just discovered 20 minutes ago, so approximately 5 hours ago. It was only left open a crack because one of the drawers was part way open. Is everything a totally loss? Some things are still cool to the touch. [more inside]

How long will my simple home fridge pickled beets last?

If I roast some beets, place them in glass mason jars along with some chopped onions/herbs/salt and pepper- and then cover everything with vinegar, screw the lids on and place the jars in my fridge- how long should the jars stay good?
