So what I'm looking for is great or famous NON-chain restaurants that are famed for having a lot of dishes. Doesn't necessarily have to be all different. Could be 100 kinds of sandwiches. Or 90 calzones. But it's gotta be a big list. I keep trying to search but I can't find what I'm looking for. Thoughts?
I heard a story on This American Life HERE and it's a story about a sausage maker who inadvertently ruins their product by getting a new building. IN the end, it turned out the problem was they had shortened the route of the final delivery of the sausages and removed what was thought to be the unimportant work of a clerk named Irving. I thought it was fascinating and I want to find other stories like that. Where would I look for them?
I'm putting together a list of recipes that only master cooks take on once they're at the highest levels. Dishes where the sauce alone can take two days. I need recipes that aren't new (aka it requires a magnetic cooktop) or too non-western. And I'd love if there was anything that had some history (though in general if it's a dish over 30 years old, it's going to). As in "It was prepared once for President McKinley...who fired the chef." Filipino Food Filter: To pick up a really cute filipina girl, I said I knew the best place for the taste of adobo in Los Angeles...which I was totally making up at the time. It worked. I have the date. Now I need the restaurant. Does anyone know a really good Filipino restaurant in LA or the Valley?
