(veggie) burgers and other analog recipes

Which standard recipes, with meat as a key ingredient, have clear vegetarian analogs? Examples, to be clear: for every hamburger, there is a veggie burger (eggplant, cauliflower, etc). Chili con carne becomes chili sin carne. For meatloaf there is Neatloaf. What else should I be thinking of? "Buy fake meat" is not heading in the right direction; "google 'vegetarian [meaty food]'" is a realistic suggestion but which foods?

What are your best recipes with yogurt?

I bought 2 pounds (the smallest size I could find) of plain whole milk yogurt, not realizing that there was an almost-empty container in the fridge. So now I have all this yogurt with a best-by date of August 5. What are your favorite ways to use it? I'm especially interested in vegetarian main dishes (bonus points for using CSA-type veggies), but would also like ways to pair it with chicken or fish.

How can my 75-year-old mom gain weight?

My 75-year old mom has always been naturally thin, but for the last couple of years she's been underweight to an unhealthy level. She seems worse now. I'm not sure how much weight doctors want her to gain, but probably at least 10 pounds if not more. She's been trying to eat things to help (avocadoes, peanut butter, some protein shakes sometimes) but she says she has trouble digesting anything with a lot of fat. She's also vegetarian and often also vegan, though she eats dairy and eggs occasionally. What should she be eating?

What is the best time and temperature for baked tofu? Every recipe I read seems to differ wildly on those factors. I've made some that has worked, and some that hasn't. The one time I got it just right I forgot to make a note of which recipe I used. I like it crispy on the outside but still a bit soft inside. Thoughts?

Mmm Tasty!

Help me rock a lentil spread! I tried the new Trader Joes Masala lentil spread and while I like the idea, I just wasn't crazy about the taste. I'd like to make my own using red lentils and tahini as a base (like Trader Joes did), but after this, I'm kind of stuck in a rut. My go-to flavour mix for almost everything is roasted red peppers, roasted garlic and a bit of roasted shallots, but it's getting old. Any suggestions Mefites?
