I'm a health-conscious college student who would like to spend less money eating out. The problem is I don't have much time, or resources (like a full scale kitchen), to prepare "real" meals.
Ideally, I would like something that I could cook in bulk and then take with me to microwave at work for lunch, or at home for dinner. But I'll need some variety.
Keep in mind, I prefer vegetarian dishes and maybe an occasional fish meal. Absolutely no red meat. :) Low in saturated fat, and easy on the budget.
Any ideas are welcome.

I lived in London for a while and fell in love with the fresh-baked cookies from Sainsbury's. They came in a pack of 5 for .99p (as I remember). There were double chocolate and chocolate chip versions and they always seemed to be soft and delicious. The problem is I just can't seem to find a cookie that stacks up to the ones from Sainsbury's. Anyone have any recommendations? I live in New York City. Or, even better, anyone know the recipe for Sainsbury's cookies? We have a persimmon in the fridge and I tried a piece of it tonight. It's very astringent and made my mouth dry. TurkeyFilter: Last night I tested this year's turkey recipe, and it was a failure. I usually make a maple syrup/butter/broth reduction and use that and cheesecloth to make a wonderful bird - 4 years running. This year, though, I have to make a kosher bird as the meal will be held at a kosher family member's residence. The olive oil-based recipe I tried left the skin dry and soggy at the same time - not an easy feat - and the bird was OK but not special. We've deep-fried before to great results, and I assume peanut oil is kosher; should I adjust for another type of non-butter fat (would margarine work? olive oil certainly didn't) or just bite the bullet and deep-fry?

Today's theme ingredient is...APPLES! What apple-based dessert recipe would you recommend for a picnic? 1) I don't care much for the very tart varieties of apple (e.g., Granny Smith), so I prefer a recipe that uses, or at least works with, the less tart varieties. 2) There will be several hours between baking and serving, so it should be servable at room temperature. 3) I'm reasonably skilled in the kitchen; you need not shy away from more difficult recipes.
