Baking with alcohol?

I have a fantastic cupcake idea, but it involves baking with alcohol, which I'm not familiar with. Help! What I'm going for is cupcakes that are a spice/rum cake with eggnog frosting (there will be a slight splash of rum in the frosting as well).

I know baking is a very careful chemistry, so I don't want to throw off the cake batter by just throwing a bit of rum into a spice cake. I also tried looking up rum cake recipes, most are NOT what I want (they either use pre-made yellow cake mix or call for a rum glaze to give it that rummy goodness). I want a rum spice cake from scratch, and preferably with rum in the batter.

So, my questions:

1) Does anyone have a from scratch spice-laden rum cake recipe?
2) Failing that, how does one compensate for alcohol added to a cake recipe?
3) Failing that, am I really just looking for a rum soak for the cupcakes?
4) Failing that, would a rum glaze + frosting be a sweetness overkill?

What's your fave eggnog?

Fancying myself a connoisseur of egg nog, I want to know your favorite pre-manufactured egg nogs (both alcoholic and non), and your favorite (or even "secret") family recipes to help me find the the best nog ever. Before you snark: I have checked Google. My google-fu is strong. But I want the opinions of a bunch of people that I would wager, on average, end up in a higher percentile of "good taste" than the unwashed google'd masses.

Also, if you are recommending a store-bought nog that is not a regional brand (that is, probably everything except Bordens), I would really appreciate also hearing what area you are buying it in so I know where it's available.

Thanks-- I look forward to trying them all!

ISO store-bought eggnog recipe

Does anyone have a copycat recipe for store-bought eggnog? I adore store-bought eggnog (despite the fact that I am Keeper of the Faith for my family's ancient, secret, home-made eggnog recipe... don't tell). Specifically, I mean the stuff that you can find in the dairy case next to the milk from around November-early January. It's a thick, sweet, creamy, eggy drink. I would like to be able to replicate this recipe, not only for off-season cravings, but to see if I can make a passable version with Splenda. Does anyone have a recipe that's close?

By the way, the stuff makes awesome French toast.

How do you make rockin' eggnog?

HolidayRecipeFilter: I am tending bar for a couple of Holiday Parties and want to make some rocking eggnog. My only real criteria is that it is more or less "safe" with regards to raw eggs, although I'm not sure I know what that means exactly. Otherwise, I'm willing to work hard, prepare in advance, buy unusual ingredients etc. as necessary. Bonus points for recipes that don't rely too much on rum, which I tend to dislike. Any other fun/tasty/festive holiday cocktail recipes are also welcome!
