I'm having a date night at home on Saturday with my wife, which means I'm cookin' dinner and making dessert from scratch. Would like to knock her socks off with a fantastic, romantic meal. The catch: we keep kosher. We're not very strict, but don't mix milk and meat products in the same meal. And I know my way around a kitchen, but am not a professional chef. So if you have an awesome recipe (or three,) that doesn't require a super-high skill level, I'd be grateful if you'd share them!

What's for dinner?
I am a reasonably skilled home cook whose skills fall into that grey area between "velveeta tuna cassarole" and "foie gras terrine with fermented plum gastrique;" my culinary skill has never failed to impress dates raised on the former, but this weekend I'm supposed to cook dinner for an experienced executive chef and I'm terrified. What are your favorite freezer-friendly recipes? Caveat: I'm diabetic and don't eat grains or legumes. However, things meant to be served over grains, legumes, or starchy vegetables are fine (I'm not always the only one eating at my table). Super bonus points for being able to freeze in portions.

I am cutting down on pork, carbs and red meat. I would like my new diet to lean towards vegetarian meals.
I can't handle spicy food and it seems like most of the recipes I keep finding are spicy and/or have curry. I also do not eat fish/seafood.

Nutrition filter: I am looking for unique ideas for making quick, easy, heathy, inexpensive dinners (in my case, for two) every night... or at least most nights. "Dinner Hacks" you might say. I feel like I've tried all the standard "solutions" already (for example, cooking a few big meals on the weekend and eating leftovers the rest of the week). There must be something else I can try.
