What should I make for dinner when I don't know exactly when it'll be?

I'm having 3 friends over for dinner on Wednesday. We're all med students, and two of them will be coming off shifts at the hospital, which will end some undetermined time between 5pm and 8pm. (Most likely between 5 and 6.) What is something good to make when you're not exactly sure when folks will arrive? Note: I don't have a slow cooker or intend to get one, and I don't have a microwave. My roommates and I would love to throw a dinner party that involves "difficult food."
