Last night I made 4 cups of ranch dressing out of 2 cups of buttermilk, 2 cups of sour cream, and 2 packets of Hidden Valley dressing mix. It'll probably spoil within a week, so unless I start eating it in bowls like soup I need ways to use it up besides condiment use. I think it would work fine as the liquid in my trusty buttermilk biscuit recipe, and be great in mashed potatoes. What else could I make with it? [more inside]
I can eat dairy and gluten in large quantities to no ill effect, in terms of any GI symptoms, as long as I'm doing so on a regular basis. If I cut them out completely for 2-4 weeks, the initial reintroduction (accidental or intentional) makes me sick for a day or more (bloating, diarrhea, etc.). [more inside]
I'm working on making a few changes to the way I cook to emphasize vegetables and grains, and minimize the animal products which I totally love but need to cut back on. However, non-dairy substitutes are not always automatically healthier than the dairy option. I need your help playing a fabulous game: whiiiiiiiiiiiiiiich ingredient is healthier? [more inside]

My lactose intolerance has worsened in the past year and so I've gone from eating yogurt/ice cream/cheese a few times a week to more like 1-2 times a month. Dairy and calcium intake has always been bad (i.e. low), but I have a new resolve to fix the problem... please help me find the perfect supplement or strategy! [more inside]
I'm shocked and appalled by the recent revelations regarding the treatment of cattle on the dairy farm in Chilliwack, BC. This is the final straw for me; I can no longer contribute to the success of factory farms by purchasing their products. Help me find a place where I can buy cream for my coffee that is from happy, humanely-raised cows. [more inside]
I'm being forced to acknowledge that dairy and wheat products are probably the source of my constantly stuffy nose and eczema. Some days the sneezing and runny nose are so bad that I can't function. So I'd like to hear from others who have gone down this path: What is it like after quitting dairy and wheat products? Because honestly those are two of my favorite things in life and I don't how I'm going to handle it, should I go down this route.

There's a recipe I love doing - chocolate eclair cake - it's pretty much graham crackers, frozen whipped topping mixed with prepared (with milk) instant pudding mix, and the chocolate top is cocoa, sugar, a little bit of milk, and butter. This weekend, I'll be taking an 8 hour train to NYC, then have about another 3 hours to kill, then I'll be at a fridge for the night, then the next day, I'll be walking around NYC for about 8 hours, and then delivered to the house of the person the cake is for, with another fridge. So aside from the pain in the ass of carrying it around... am I risking major major dairy spoilage? I've left this cake sitting out on a table at work all day, but this seems a bit different. Thank you!

Been a lifelong carnivore. Went vegan recently because factory meat farming, factory dairy, etc. just appall me. Unfortunately, since I'm allergic to soy and corn, a vegan diet is very limiting. I bought some Meadowbrook Farms whole milk in a glass bottle a couple of days ago. Expiration date: Jan 21. I noticed today when I opened it and poured milk out that some of the milk solids had congealed on the inside of the top of the neck of the glass jar (and some of that came out with the poured-out milk). Is this a sign of rottenness, or of some kind of extremely wholesome milk? I can't tell from the smell.
