What are the hardest to prepare recipes in history?

I'm putting together a list of recipes that only master cooks take on once they're at the highest levels. Dishes where the sauce alone can take two days. I need recipes that aren't new (aka it requires a magnetic cooktop) or too non-western. And I'd love if there was anything that had some history (though in general if it's a dish over 30 years old, it's going to). As in "It was prepared once for President McKinley...who fired the chef." Ideas? [more inside]

Dinner for 75

Every year we throw a Summer Solstice party that includes a buffet dinner for about 75 neighbors and friends. I cook everything because it's easier to do that than to organize a pot luck, which isn't part of my culture. Most years, I enjoy preparing this feast. This year, I am completely uninterested and fantasizing about ordering 25 pizzas and a keg. Hope me, please! [more inside]

Can I slow-cook tough beef?

I apparently over-cooked some stir-fry beef. It's edible but horribly tough and sort of tasteless, though it's very lean, good beef. I want to know if I can salvage it by slow-cooking it overnight. Anyone? [more inside]

Teach me how to cook congee.

I've searched previous instances of congee showing up in comments on the Green, but very few actual recipes. None of the recipes I've found online even agree on the rice-to-water ratio or cooking time. Recipes from any nation, savory or sweet and any serving tips or suggestions most welcome!

Small fish: whole vs "whole"

I'd been under the impression for many years that it was fine to cook and eat small (finger length-ish) fish whole; head, tail, AND guts. I can find a few articles on line supporting this, but they all use a different size standard, and there are virtually NO recipes I can find that suggest this practice. The recipes say they're for (e.g.) whole smelt, but the first step always involves gutting/cleaning them, which is a slightly different definition of whole than I thought. [more inside]

Looking for Platforms/Positions, Campaign Summaries, Judicial Ratings & Tiny-Position Info to Help Me Cast my Cook County Ballot

I’m a resident of Chicago (Cook County, Illinois). I’m very much not a fan of politics, but that lack of enthusiasm doesn’t extend to not voting – I’d still like to make an educated choice when casting my ballot, but without re-engaging in the political blogosphere, etc.. So, could you help me do my due diligence by helping me find websites that would contain the three particular kinds of information you'll see me describe inside/after the break? [more inside]

Dinner & Drink for the Insecure Epicure

What's for dinner? I am a reasonably skilled home cook whose skills fall into that grey area between "velveeta tuna cassarole" and "foie gras terrine with fermented plum gastrique;" my culinary skill has never failed to impress dates raised on the former, but this weekend I'm supposed to cook dinner for an experienced executive chef and I'm terrified. Suggestions for dinner, dessert, and an accompanying cocktail requested. [more inside]

How common is/was Alice?

Do/did people have Alices? I'm referring to The Brady Bunch's Alice -- a combination maid/cook/nanny who lived on site and was treated as a much-loved member of the family (with no outside life of her own aside from a mostly chaste relationship with Sam the butcher) while doing almost all of the real work of maintaining the household. Does/did this kind of role really exist in real life? [more inside]

Recipes that turn time-consuming food prep into short bursts of effort over several days

A friend just shared her recipe for "Friday Chili," which requires 5-10 minutes per day, starting Monday, to yield a steaming pot of chili for dinner Friday night. I love this idea.
