Does this tailor really exist?

I've heard rumors that there's a talented Chinese bespoke tailor that comes to SF and books a meeting room where he takes orders and measurements. He then flies back to China (or possibly it was Hong Kong) and assembles the suits. A month or two later, when the suit is completed, he ships it to the customer. What are these Chinese plates?

These plates with golden inscriptions (1 2 3 4) were bought in China in the 1950s or 60s. They're 13.4 cm tall, 9.5 cm wide and about 4 mm thick, two-sided; I can't tell which ones are page 3 and 4. They're illuminated from behind in these photos so you can read them more easily. What are they and what do they say?

What's up with Chinese place names? When I was a kid looking at a map of China, it showed the capital as 'Peking(Peiping)'. Now it's Beijing, and there are other places like Guangzhou that used to have a name I recognized. I first noticed this in the late 80's and with people I knew who had gone there, but now it's ubiquitous. My question is not about why or if China changed the name, but why did the US usage change. Why just China? (we don't say Lisboa, Firenze, München, Moskva, etc.) [more inside]
