My wife and I have a flank steak in the freezer and a small kitchen with no real outdoor grill access. Does anyone have any flank steak recipes that involve braising rather than grilling? I know it's a lean meat, so it doesn't lend itself to slower cooking, but I was wondering if anyone had found some successful workarounds.

I love cooking with my new dutch oven, but have never liked the taste of alcohol in food. I know I can always substitute, but is there a good braising cookbook that minimizes alcohol use in the recipes?
