I have a day-long layover (7.5 hours) in Amsterdam coming up. Research leads me to believe the airport is relatively close to the city, enough that I can probably take a train in and hang out for a few hours. What to do? I'll be there during the day. Things I'm interested in: walking around, good food/beer, clothes shopping (smaller boutique type places), modern art. I was in the city about 10 years ago so I saw a couple of the major sights.

I'm heading to Europe in the thick of winter mostly as part of field work for a research degree. Amsterdam, Berlin are definite destinations. All advice I have is that winter in Northern Europe sucks hard and isn't a great time to be going. Can someone please explain why that's so apart from the cold? Is it a fun place to go out in the evening? Are the clubs good? Is there a good gig scene (punk-rock/indie/folk)? Is the city fast- or slow-paced? Is it safe for a woman to walk alone at night? Is the public transport good? Does it run all night?
Which are the interesting areas to live in? Is it a beautiful city? What is the cost of living? For example, for: an apartment, a gig ticket, a beer, a pint of milk, a sandwich at a take-away place. Is there a radical political scene?

Husband & I are going to both Dublin & Amsterdam in September. We're seeking accommodations (either Hotel or Bed & Breakfast) that would allow us to live like locals enjoying a weekend* (see inside) .
Ideally, the hotel would be far enough to avoid traffic/congestion/tourists but close enough to be able to take public transportation to attractions. [more inside]
