Going to Tokyo, allergic to soy. Help me build a list of "safe" dishes!

I'm going to Tokyo in the fall. I'm allergic to soy. It is an allergy triggered by the soy protein, which means that tofu and edamame are not OK but soy sauce is because the protein is denatured. (This is common for people who are allergic to soy - I am no special snowflake.) The easy solution would seem to be to live on yakitori and yakiniku...but I'm also a vegetarian. Difficulty level = 11! [more inside]

Why do I get so congested after I eat?

I'm trying to figure out why I get congested after I eat many types of foods. Often after I finish a meal, I get very congested in my chest 10-15 minutes later, and my throat and chest feel somewhat tight. Not wheezing-I-can't-breathe tight, but tight like how things feel during a panic attack. When this happens I have to cough a lot and clear my throat to get the phlegm out of my chest. Then, after about 15-20 minutes, everything goes away and I feel normal. What's going on? [more inside]

Can you recommend any well-grounded books or articles about allergies?

I'd like to read some intelligent, well-sourced and scientifically informed books and articles on allergies (including food allergies) and whether the incidence of allergies and food allergies is on the rise. I'm an educated layperson. Can you recommend anything? To provide a bit more context, I feel like I've heard and read a lot about allergies in recent years from news sources and friends and acquaintances, but much of the information seems suspect. To give an example, I've had people pass on information about allergies they got from chiropractors or new-agey sources. I think allergies are a real thing, but it seems like there may be lots of mis-information out there about them. I'd like read about this issue and become more well-informed, but I don't know where to start.
