Need snack help, and have a list of allergens which limits me...

Trying to lose those last few pounds, and snacks are my downfall. I am getting tired of Ye Olde Afternoon Trail Mix. I need some new ideas for carby/protein snacks (to accompany a piece of fruit) which are portable, will keep in my bag all day, and which are compatible with my daunting list of food allergies. I've lost almost 20 pounds in the last year, and kept it off, for the most part. But it's creeping on again because I am so sick of my snacks that I am tempted by treats when I'm out. I need something a little more substantial in the afternoon, so for as long as I have been tracking, I have been eating a satisfying, filling snack of a piece of fruit and a 1/2 cup of trail mix consisting of rice puffs, craisins or raisins, and soy nuts or sunflower seeds. I am sick of it! I want something else of a similar feel and of a similar satiety. BUT...I have some food allergies, and it's tricky to find things. My restrictions right now (all of these have been verified by medical testing...)

NO wheat products
NO corn products (incl. corn starch)
NO flax
NO tree nuts or peanuts (soy nuts are fine but I am sick of them)
Limited dairy (it's fine in small doses as an ingredient, but no milk or cheese)

Please do not suggest fruits; the snack I am trying to find substitutions for is IN ADDITION to a piece of fruit :)

So far, my list of ideas is pretty minimal. Hummus with carrot sticks or rice crackers with turkey pepperoni. I need stuff I can pack in a tupperware and take with me when out. Something carby/proteiny which can be enjoyed with a piece of fruit.

Recipe Challenge

Do you have a recipe that will work for these difficult conditions? I have access to a lot of high-quality ingredients but I DON'T have a lot of space and I have many food restrictions. --I have no room to chop or dice more than one ingredient, unless they all go in the dish at the same time. Or unless I can use some frozen or canned version instead of chopping fresh.

--I hate chopping garlic so I have to be able to use prechopped garlic.

--Meat is ok but the less I have to handle it the better. I just don't have the space to juggle it safely with fresh greens etc.

--Oven stuff needs to fit in half the size of a normal oven

--Fewer pans = better. I do have a rice cooker and a small crockpot.

--Anything that smokes is probably not practical. I don't have an exhaust hood and it's too cold to open the windows and pray.

--Fewer ingredients = better.

--More whole grains = better.

--Lower number of spices = better. Not the amount of spice, the variety. I can't be running out to Whole Foods for fresh thyme AND rosemary AND marjoram AND allspice. That place is a madhouse. Nor do I have room to store many spices over a long period of time.

--Hot stuff, I love it, best if I don't have to chop any peppers

--I love healthy fats, like vegetable oils & avocados.

--I love fresh food, fresh fruit, fresh veggies; but canned and frozen are awesome too.

--Cheese must be optional OR aged for a very long time.

--Bread is ok but it shouldn't need to be fresh

--I like strange flavors and I'm really very adventurous with food, & will eat nearly anything I'm not allergic to.

ABSOLUTELY NO:
Onion
Tomato
Apple
Shellfish
Pear
Kiwi

cooking with (mild) allergies

I have been diagnosed with a number of non-life-threatening food allergies and been told to avoid them as best possible. Please suggest recipes, substitutions, general tips, etc. Forbidden foods listed after the cut. allergies: corn, rice, rye, wheat, eggs, cow's milk and cheese, oranges, strawberries, string beans, tomatoes, potatoes, shellfish, chicken, pork and chocolate.
other useful info: I'm in Vancouver, 22, male, decent in the kitchen, prefer things to be cooked quickly, and I don't eat beef for religious reasons.
secondary questions: what do I order if I eat out? can I no longer drink beer?

Gluten-free viddles?

Gluten-free viddles? Next Tuesday is the last in a graduate class I am taking, where each week one person was responsible for bringing snacks for the group. This last class sees all the students bringing something as a pot luck style. We have a class member who found out within the last year that he is allergic to gluten, as well as a nut allergy. Each week he was either forced to sit by complacently while we ate pizza and cookies, or someone would try to include him by bringing veggies and dip. I would like to bring something for him that is rather more exciting than a crudite, and since up until recently his favorite dish was a big helping of his wife’s spaghetti and meatballs, something that would be vaguely reminiscent of a dish that had (r may have had) gluten in it.

I was thinking of a quiche with a thinly-sliced potato ‘crust’, much like a pomme Maxine, but I am not even sure that would work (and I would not know how exactly to do it. Par-cook the potatoes? Fry them separately?)

Either way….any ideas for good gluten-free food? I am looking for something people have tried, ideally, so that I do not end up making some weird slop.
