Help me go hiking in the Dolomite Mountains

A friend and I are traveling to Italy at the end of June and will be going hiking in the Dolomite mountains. We plan to head out from Bolzano on one of the lifts and hike from rifugio to rifugio (and then back) for about 5 days, with the route to be chosen with help from the tourist office there. Has anyone done this and have 1) any specific advice on which trails to take; 2) recommendations for inexpensive lodging for our one night in Bolzano; 3) suggestions for what we should bring with us (keeping in mind that we want to travel light)?

Tuna recipe from Italy?

I recall eating a meal in Italy that I THINK was just rice, canned tuna, and white beans drizzled in olive oil. Is this a real "dish"? I've put those four ingredients together and it doesn't taste the same. And it's a really monochromatic meal. Anyone have any thoughts on the "real" dish, or if not, how to spice up the one I remember? It was in Parma.

Please evaluate my route from Italy to Spain by car

I plan to drive from Venice, Italy to Valenica, Spain in April or May 2009 using the following route. I will stay for a few days or weeks in little spots along the way. I should have about six weeks in total. I mostly want to see a little of Spain and Italy, the French Riviera, Montpellier, Marseilles and finish at Valencia. Apart from that anything else I should try to see? Any parts of the chosen route I should avoid? What's driving like along that route? Any rental car companies which will let me pick up in Italy and drop off in Spain?

I want to make next career move in Italy (experience in marketing/sales/media - but open to any industry) -- and currently live in NYC. Best strategies? I was thinking maybe an international recruitment agency based here in the States (does this exist?) or American companies with offices in Tuscany (still cannot find a list like this).
