MisterBen needs recommendations for a very specific kind of Indian cookbook – one that’s organized by technique, not by course or ingredient. Imagine if Alton Brown or Mark Bittman wrote an Indian cookbook. The idea is to learn reusable techniques and general concepts of what flavors are used together. What he already has: Madhur Jaffrey’s classics, Raghavan Iyer’s “660 Curries”, and Vikas Khanna’s “Flavor First”, which are used as bibles. Almost all Indian ingredients can be found in our area, and he is comfortable at making his own masalas, so feel free to recommend books you might think of as advanced.

What is this plant that was in our CSA box?

What is this plant that came in our CSA box today? The bunch is about 10-12 inches long, it smells vaguely like cilantro but without so much "soapiness", and the leaves are somewhat fennel-like. The flowers are small and pinkish to purplish.

What vegetables can I try in Japanese Curry? We usually make it with chicken, carrots, potatoes, and green pepper. I am looking for a way to cut the carbohydrates so would like to replace the potatoes with a lower-carb option. Please only make suggestions that you have tried and tasted good, no idle speculation.

Find me a class that really cooks

Please recommend good cooking classes in Seattle. I would like to give a friend a cooking class as a holiday gift. Said recipient is an omnivore (no dietary restrictions), has strong beginner (I wouldn't quite say intermediate) skills in cooking, loves both "American" and a wide variety of ethnic cuisines, and (just a random fact) is a fan of the Food Network.
