Disney World / Orlando Studios / Quiet-ish Beach vacation advice

I'm super bad at planning travel stuff and I'm trying to take a vacation with my girlfriend at the end of December. We'd like to do 3 nights at a quiet-ish beach within reasonable driving distance of Disney World and Universal Studios (because Harry Potter) in Orlando, and 4 nights doing both of those theme parks. Disney World: Stay on or off the property?

Thinking about taking the youngins to Disney World in June. Daughter will be 11 and it will be her second trip. Son will be 4 1/2 - first time for him. Last time, we stayed at a Disney property: rode the shuttle buses, swam in the myriad pools, drank $2 cokes, etc. This time, cash flow is more of an issue so I'm looking at Kissimmee hotels. Just wondering, though, if the low price is worth losing the on-site amenities and convenience. Been there? Done that?
