Mmm, bagels...

Thinking of opening up a bagel store in a town nearby where there are no bagel stores. Looking for tips, suggestions, advice, and name ideas! (First off, if you've read my previous questions, you know I'm a bit conflicted because in the past year I have graduated college, gotten two part time office jobs, and was thinking about becoming an english teacher. Sorry.)

Anyway. My father and I are pondering going into the bagel business. Yay! Before we decided whether or not this is a good idea, I am going to be getting some early morning work at a bagel shop, in order to figure out if I like it, what it really entails, and if it is feasibly for us to do. I'm also working on a business plan.

I've read a few accounts of the bagel business (like the self-proclaimed bagel guru's), and have a general idea of how it works.

If we do it, we will be using the kettling method, and we will be making them from scratch, not a starter.

And we'd be doing it on Route 6, in Carmel, NY, and the location is a good one - lots of parking, close to I-84, no other shops around, etc.

So, have you worked in, run, or owned a bagel shop?

What does your favorite bagel shop have or do that is different and awesome?

Do you have a fabulous bagel recipe?

Any other random bagel thoughts or recommendations?

And, bet of all, what clever/fun/interesting/descriptive names can you suggest? (or boring and standard, that works too!)

Good hiking trails in Carmel, NY?

Good hiking trails around Carmel, NY, preferably at Ninham Mountain? Either google has failed me or I'm doing something wrong. Are there good hiking trails in Carmel, NY? I know Ninham Mountain should be the tallest one in the area, does anyone know where any of the trails start? I'd need directions for how to drive up to the trail and everything. Trail should be at least a couple miles long, but not 15 miles long (I've seen some mountain bike trails for the area, but would like to see if there are shorter hikes). If the trail ended in a nice scenic view from the top of the mountain that'd be great.

I'd prefer something within 5 miles of Carmel.

Is there public transportation to Putnam County (New York) Supreme Court?

What are my transportation options for traveling from Manhattan to Putnam County Supreme Court in Carmel, New York? I need to attend a court proceeding at Putnam Co. Supreme (20 County Center, near lake Gleneida) later this month and don't know the area. Borrowing a car is an option but that's really my last resort. I'm wondering

-- If it's possible to get near the courthouse via Putnam Area Rapid Transit bus from a Metro-North rail station (the PART website was confusing, but it doesn't look like the routes do what I need here)
-- Whether it's possible to hail or call a cab from Southeast train station
-- If cab is a good choice, fare estimates and phone numbers for recommended taxi services.
Thanks.

CA central coast road trip

Help me plan a post-Thanksgiving road trip up California's central coast! the basics: my boyfriend, his brother (who will be visiting from out-of-town), and I are going to take a 3-day road trip up the central coast the weekend immediately following Thanksgiving. (We may also have the company of another female -- a frisky fox terrier! -- but that's not definite.) Our basic itinerary is:

Day 1: Drive from LA (possibly stopping in Solvang). Overnight in San Simeon or Cambria.
Day 2: Hearst Castle in the morning. Drive up to Big Sur. Overnight in either Big Sur or Carmel.
Day 3: Drive back to LA. (Possible stop in Solvang if not on Day 1.)

I've been to Hearst Castle once before (stayed at the Cambria Pines Lodge) and have also stayed a night in Big Sur (at Ripplewood cabins). I've spent a few hours in Solvang having coffee and wandering around. My main questions are:

- Are there any pet-friendly accomodations in Big Sur? I've found places in both Cambria and Carmel (the Cambria Pine Lodge and the Carmel River Inn, both run by the same company) that will take pets, but nowhere in Big Sur. (I'm also fine with non-pet-friendly recommendations too, since we're only about 50/50 on bringing the dog anyway.)

- Recommended sights/restaurants/bars in Carmel/Monterey? (Preferably not too touristy, with the possible exception of Steinbeck-related stuff.)

- I've never driven up PCH this late in the year -- how early does the fog tend to roll in?

- Good Danish restaurants in Solvang? We're probably not going to do the wine tasting thing (saves on the merlot jokes), but if anyone has a really strong recommendation on that front that they're dying to share, go ahead!

Weekend trip in Monterey or Santa Cruz

The parental units want to organize a long-weekend in the Monterey/Santa Cruz area (but preferably Monterey/Carmel) in the middle of June. Anybody have any ideas of a cool place to stay that would be relatively inexpensive and still available? The rents were thinking about something like a small house or a villa somewhere. There will be seven adults and a two-year old. We could also do something like two 2-bedroom units. Any ideas would be really appreciated, I have no idea where to start looking. Thanks!

Monterey or Carmel?

Monterey or Carmel? Inexpensive weekend hotel/B&B recommendation? Preference is close to the water, less than half a mile, night life not important, yet without blowing my credit card to bits. [NMI]
