How can I set Mac OS X so that it doesn't create .DS_Store, .Trashes, and ._* files on USB drives I work with? [more inside]

I did something to my computer (iMac G5) over a year ago, and now every folder includes a file called ".DS_Store". What is it, and how can I make it invisible again?
