How can I better sync contacts between my Macbook and iPod Touch.

I am trying to sync my Macbook's (Leopard) Address Book with my iPod Touch. The problem is that fields on the Mac like "spouse" and "children" do not show up on the Touch. Is there a fix for this? Thanks.

Unfortunately they just don't sync. You can always try sending feedback to Apple or hope that a 3rd party releases a more robust address book.
