Tell me what these delicious "stems" are

What is this salad bar item: white colored, shaped like mushroom stems, but made up of a few rings; crunchy, a tinge sour, and delicious. Any ideas?

In case you're jonesing for some more, they're sold canned at basically every supermarket everywhere. Chill them first.
