I checked both Algonquin and Cordon Bleu, and while both have courses I'd love to take, neither has a knife workshop listed (currently).

The Urban Element offers cooking courses, and has offered knife skills courses in the past. You could always ring and see if they'd notify you when a new knife skills course is going to take place.
