		<description>I&apos;m just now finishing some kick-ass homemade shortcakes with strawberries and whipped cream.&lt;br&gt;
&lt;br&gt;
In a food processor:&lt;br&gt;
Mix 2c flour, 1T baking powder, 3T sugar, 1/2t salt.&lt;br&gt;
Cut up 6T COLD unsalted butter (3/4 stick) into chunks. The key here is COLD. Add to the bowl and pulse a few times- don&apos;t overdo it. After a few pulses, it&apos;ll look sandy. Add 1 1/4c (1 small carton = 1 cup) heavy cream, mix with a fork until it just comes together. Again, don&apos;t overwork it.&lt;br&gt;
&lt;br&gt;
On a lined baking sheet, put 1/3c balls of the dough and flatten them. You&apos;ll comfortably get 4 on a sheet, the recipe will give you 6-7. Bake for 15-20 minutes at 425, until golden brown. While they&apos;re baking, whip the rest of your cream with some sugar and vanilla.&lt;br&gt;
&lt;br&gt;
Let the shortcakes cool, then cut in half lengthwise. Fill with berries and whipped cream.</description>

		<description>    Boiled Chocolate-Oatmeal Cookies&lt;br&gt;
&lt;br&gt;
    2 cup granulated sugar&lt;br&gt;
    3 tablespoons cocoa&lt;br&gt;
    1/2 cup milk&lt;br&gt;
    1/4 cup butter or margarine&lt;br&gt;
    3 cups quick-cooking oats&lt;br&gt;
    1 teaspoon vanilla extract&lt;br&gt;
    1/2 cup peanut butter (any kind, I&apos;ve use plain and crunchy)&lt;br&gt;
    1/2 to 1 cup nut meats, if desired&lt;br&gt;
 &lt;br&gt;
&lt;br&gt;
       1. Bring to a boil sugar, cocoa, milk and butter. Cook 1 minute.&lt;br&gt;
       2. Remove from heat and quickly add oats, peanut butter, vanilla and nuts.&lt;br&gt;
       3. Drop by teaspoonful on waxed paper. Let stand 1/2 hour until cool (if you can). &lt;br&gt;

My mom used to make these for the school fair. This is not her exact recipe, but very similar, her&apos;s had a pinch of salt.</description>

		<description>I&apos;ve had good luck with the following egg substitute in baking -  dissolve 1T cornstarch in 3T warm water, mix in 1T vegetable/canola/corn oil to replace one egg.  I&apos;ve used this in cookies and coffeecakes.  Doesn&apos;t work in those cakes which ask for divided eggs, as you might expect.  (I use this a lot, as I bake often for a group with a couple of egg-sensitive people.)&lt;br&gt;
&lt;br&gt;
A substitute for 1 cup of buttermilk is 1 T vinegar or lemon juice in the bottom of a measuring cup, add milk to the 1 C line.  Or you can use plain yogurt or sour cream cut with a little milk to the proper consistency.&lt;br&gt;
&lt;br&gt;
Most shortbread recipes and many of those for scones don&apos;t call for eggs.</description>
