What to make with kiwifruit?

I have a few kilograms of nearly ripe kiwifruit - what shall I make?

Any good ideas - tarts, cocktails? I have a full kitchen, just no inspiration!

I'm kinda cheating here, as I personally don't have a recipe. However a site I discovered though a previous AskMe, TasteSpotting has a few ideas.

NEW ZEALAND KIWI CHEESECAKE

1 1/2 c. graham cracker crumbs
1/4 c. granulated sugar
2 tbsp. milk
1 tsp. vanilla extract
1 c. granulated sugar
3 tbsp. confectioners' sugar
2 kiwi fruit
6 tbsp. butter, melted
1 1/2 lbs. cream cheese
1/4 tsp. salt
4 lg. eggs, lightly beaten
1 c. sour cream
1/2 tsp. vanilla extract

Mix cracker crumbs, 1/4 cup granulated sugar and melted butter Press this mixture on the bottom and partly up the sides of a greased 9-inch baking dish or pie pan. Chill for 5 to 10 minutes or bake for 10 minutes in 350 degree oven. Cool before filling.

In a large mixing bowl, beat the cream cheese, milk, salt and vanilla until thoroughly blended. Add the eggs and 1 cup of sugar and beat until light and creamy. Pour into prepared pie shell and bake at 350 degrees for 35 minutes or until lightly brown and the cake is set in the center. Remove from the oven and cool for 10 minutes.

Prepare the topping of sour cream, confectioners' sugar and 1/2 teaspoon vanilla. Spread this on top of the cake and return to oven, baking for another 15 minutes. Cool and refrigerate. Garnish with peeled and sliced kiwi fruit.

Smoothies! Mmmm - whizz them up with a little plain yoghurt and milk. Or kiwi fruit martinis - crushed kiwi fruit, vodka and ice, strained into a glass.

Banana and kiwi bread. It's delicious!
Use your favorite recipe, just use 50% banana and 50% kiwi.

I've made wonderful kiwi sorbet before. It's quite simple:

Peel, slice, freeze.
Add a spoon or two of sugar if you like.
Toss into a food processor or blender.
Eat. :)

Only one thing is you have bucket loads. Kiwi Chutney!

sometimes I add plum, it balances out the tartness with a bit of sweet.
double up the recipe if you have kiwis coming out the wazoo. Just spend one day sweating over the oven, and your set for a few months. also makes great gifts.

More kiwi sorbet love

Second the kiwi jam:
4 C coarse chopped kiwi
3C sugar
3-4 T liquid pectin
1 T lemon juice

Cook the kiwi and sugar in a non-reactive pot (2.5qt min) and bring to a boil, lower the heat and simmer for about 15-20 minutes. Stir in pectin and lemon juice, briefly return to heavy simmer, remove from heat, skim off foam and pour jam into jars to cool. Move to fridge. I won't go into the details of canning/preserving.

FWIW, if you follow recipes on the pectin packaging, they'll have you using up to twice as much sugar as fruit by volume. Trust me, you don't need it.

Not only does kiwi go well with strawberry, it can be used as a substitute for it. Try making kiwi rhubarb pie. No, really!

Salsa verde. Dice, then add coriander/cilantro, tomatillos (canned is fine), green chillies/chiles and lime juice. Serve with corn chips, chicken or grilled pork.

Ice cream. Puree kiwi and pass through a sieve. Add half its weight in icing/confectioners sugar and check for sweetness. Soften a couple of litres/quarts of vanilla ice cream. Swirl through the kiwi puree. Refreeze.

Puree, sweeten and make popsicles.

Make kiwi-flavored vodka by steeping. Alternatively, I see you're in Auckland, so you should have easy access to a still if you want to make your own kiwi schnapps.
