In which careers can one can get the most experience doing complex negotiations early on -- and make good (or great) money at it?

An attorney in a high-volume, high-demand practice in a technically challenging niche market with relatively quick turnaround between transactions.

(Though your definition of "complex" could change my answer.)

Pretty much sounds like you are looking for outside sales. Look for positions with account executive, account manager, business sales, etc... in the name.

How early you can get the experience is always inversely related to either the complexity of the negotiations, or the money you will make. It is sometimes inversely related to both.

Yep, a transactional attorney working big corporate deals would probably fit the bill, especially as an associate in an understaffed firm.
