  	<description>Compost them. If you&apos;ve made proper stock, the vegetables will have given their all to the liquid, and what&apos;s left will have very little flavor and a completely flaccid texture.</description>

  	<description>They do lose their flavor, or most of it, but I like to use them to thicken something in the meal if possible.  Hit them with a stick blender and add them to thicken some of that savory stock for something in the meal.  They basically only add roughage and thicken, they don&apos;t really add flavor.</description>

  	<description>No way to MOST of the answers. Take out the potatoes, and make mashed potatoes. Take the rest, add in blanched tomatoes, and blend it all. Add desired water, and you will have the BEST tomato soup ever.</description>

  	<description>After I make vegetable broth, I run the veggies through my juicer, add the juice to the broth, and mix the fiber with some beans/rice/spices to make veggie burgers. &lt;strong&gt;Yum!&lt;/strong&gt; and no waste =)</description>

  	<description>Quick follow-up - I just made hal_c_on&apos;s suggestion, and HOLY CRAP is this good. I added 1 can diced tomatoes, 1 can tomato sauce, basil, oregano, thyme, marjoram, garlic, salt, pepper and olive oil to taste.&lt;br&gt;
&lt;br&gt;
Oh jeebus it&apos;s good. YAY FOR HAL!</description>
