What to do with a meyer lemon?

We have this beautiful lemon that smells like heaven. What should we do with it to preserve the scent?

What about candying 'em? You can candy either the peels or the whole fruit — either way you slice it really thin, boil it in sugar syrup, and let it cool on some waxed paper.
