Norton AV keeps finding java class files that that have viruses and trojans: byteverify, backdoor.Hacarmy, Js.Exception.Exploit. How do I keep them off my system?

I use both IE and firefox/firebird

I suspect if you really want to avoid them, turn of java. Or at least choose a security setting that forces the browser to ask if you want to run specific applets.

This page should make you worry whether Norton AV is actually finding everything on your computer. If you can, I'd re-install from scratch, and install a firewall. If you really must run IE, make absolutely sure ActiveX is turned off.
